Assessment of the nutritional status of students and administrative staff in a university community

Introduction: Diet and nutritional status are key determinants of health in the university population, as they influence the prevention of non-communicable chronic diseases and quality of life.
Objective: To assess the nutritional status and dietary habits of students and administrative staff in a university community.
Methodology: A descriptive, cross-sectional, and observational study was conducted with a sample of 376 participants (236 students and 140 administrative staff). Anthropometric parameters and body composition were assessed using bioelectrical impedance (weight, height, body mass index, and body fat percentage), and food consumption was evaluated using the Healthy Eating Index questionnaire.
Results: The results showed inadequate dietary habits, characterized by low dietary variety and a predominance of food intake requiring improvement (72.9% in students and 77.9% in administrative staff). Limited consumption of fruits and dairy products was observed, along with frequent intake of cereals, meat, and sweets. Administrative staff presented significantly higher values of weight, body mass index, and body fat percentage compared to students (p < 0.001), reaching levels close to obesity.
Discussion: The findings reveal unhealthy dietary patterns and a high prevalence of overweight and obesity, consistent with previous studies.
Conclusions: The studied population shows excess weight and inadequate dietary patterns, increasing the risk of non-communicable chronic diseases and highlighting the need to promote healthy eating habits in the university setting.
